Tasting notes: In northern Madagascar, the cocoa plantation is surrounded by tamarind trees that give the beans their unique fruity flavor. Very acidic and with a high cocoa content, this dark chocolate reveals a certain bitterness and fruity and citrus notes.
Pairings: Vanilla, Saffron, Lime, Caramel, Pedro Ximénez, Licorice, Raisin.
